The perfect cool weather soup for the upcoming holiday. And it’s so simple, it only has five ingredients. And so tasty, I make it year round, not just at Halloween. It’s based on a recipe from Nigella Lawson, but I prefer smoked mozzarella to plain, as it gives it a good smoked, bacon-like flavor without all the extra fat. It almost tastes like split-pea soup made with a ham hock that’s been simmering on the stove all day.  Enjoy!

 

Prep Time: 5 minutes

Cook time: 10 minutes

Serves 4-6

 

Ingredients:

  • 3 cups water
  • 1 cube of veggie bouillon
  • 1 32-oz. bag of frozen peas
  • ½ yellow onion, chopped
  • 1 ball of smoked mozzarella, cubed (approx. 10 ounces)
  • Salt & pepper to taste

 

Directions:

  1. Bring the water and veggie cube to a boil over medium-high heat.
  2. Add the peas and onion and simmer until cooked through (approx. 5 minutes).
  3. Drain the peas/onions from the stock, but reserve the liquid for later.
  4. Puree the peas and onions in a blender or food processor.
  5. Add the mozzarella and puree again until smooth.
  6. Slowly add some or all of the reserved cooking liquid back in until you get the consistency you desire – it’s all up to you whether you like a thicker or thinner soup.
  7. Garnish with a fake spider ring, plastic eyeballs,  or something creepy, if you so desire.
  8. Serve with a grilled cheese sandwich or toasted French bread.
